FIELD: chemistry.

SUBSTANCE: invention relates to beer brewing technology. The method involves mixing tangerine peel and hop, extraction of the obtained mixture with liquid nitrogen and separation of the corresponding miscella, cutting, drying in a microwave field at given process parametres and roasting girasol-sunflower. Girasol-sunflower is mixed with malt. The obtained mixture is saturated with the separated miscella while simultaneously increasing pressure. Pressure is reduced to atmospheric level while simultaneously freezing the mixture which undergoes cryogenic grinding in the medium of the released nitrogen. Sugar is added. Water is poured and saccharification is carried out to obtain wort. Brewing yeast is then added and primary fermentation, after fermentation and filtration are carried out.

EFFECT: invention shortens duration of the process and increases foam stability of the end product.
