FIELD: food industry.
SUBSTANCE: method provides for mixing of thyme and hop in the mass ratio of 1:10, extraction of produced mix by liquid nitrogen to separate according miscella. Yacon is cut, dried in microwave field at the specified parametres of the process and dried, yacon and malt are mixed in the mass ratio of 1:(10-25). Then produced mix is impregnated with separated miscella with simultaneous increase of pressure, pressure is reduced down to atmospheric one with simultaneous freezing of mixture and its cryo-ground in the medium of released nitrogen. Then mix is poured with drinking water and saccharified to produce wort, beer yeast is added, then main fermentation, fortification, afterfermentation and filtration are carried out.
EFFECT: method makes it possible to reduce duration of technological process and to increase stability of foam in finished product.
