FIELD: food industry.
SUBSTANCE: invention refers to food industry, in particular to production of bakery products intended for protective diet. The process includes preparation of dough by mixing the entire amount of flour, water, aqueous solution of salt and yeast, fermenting the dough, its cutting, proving and baking dough pieces. When preparing the dough powder of leaves of stevia, obtained by drying them up to a moisture content of 10-11%, subsequent crushing in a thin rotating spiral film with thickness of 0.1-0.5 mm at a pulsating pressure gradient of 2.7 MPa and a temperature of 25-30°C, is additionally added. The powder is added into the dough in a quantity of 2.0-5.0% of flour weight.
EFFECT: finished product obtains high nutritional value and increase of freshness conservation term of products is provided.
