FIELD: food industry.
SUBSTANCE: invention refers to technology of production of substitutes for coffee. The method provides preparation of prescription components, extraction of allspice by liquid nitrogen with corresponding miscella separation, yacon cutting, drying in the microwave field at the given process parametres and frying, frying barley grains, chestnuts and soyabeans, mixing of yacon, barley grains, chestnuts and soyabeans, soaking the obtained mixture with separated miscella with simultaneous increase of pressure, and release of pressure up to atmospheric with simultaneous freezing the mixture and its cryomilling in medium of the evolved nitrogen.
EFFECT: method enables to obtain new flavoured coffee drink production from non-traditional raw materials using non-waste technology.
