FIELD: chemistry.

SUBSTANCE: invention relates to brewing technology. The method involves mixing ajwain and hop, extraction of the obtained mixture using liquid nitrogen with separation of the corresponding miscella, cutting, drying in a microwave field with given process parametres and roasting girasol-sunflower, mixing girasol-sunflower and malt, saturating the obtained mixture with the separated miscella while simultaneously raising pressure to a value corresponding to pressure of saturated nitrogen vapour at saturation temperature, reducing pressure to atmospheric pressure level with simultaneous freezing of the mixture, cryogenic grinding in the medium of the released nitrogen, adding water and saccharification to obtain wort, adding brewing yeast, primary fermentation, fortification, after-fermentation and filtration.

EFFECT: invention shortens duration of the process and increases foam stability of the end product.
