SUBSTANCE: invention relates to technology used to produce coffee substitutes. Method provides for preparation of recipe ingredients, extraction of cocoa husks by liquid nitrogen. Thereafter corresponding miscella is separated. Then yacon is cut, dried in the microwave field at preset process parametres and roasted, barley, oat and rye grains are roasted. Yacon is mixed with barley, oat and rye grains, the obtained mixture is impregnated with separated miscella with simultaneous pressure boost. Whereupon the pressure is released down to the atmospheric pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen.
EFFECT: method makes it possible to produce new flavoured coffee drink from non-traditional raw materials according to wasteless technology.
