FIELD: food industry.
SUBSTANCE: method provides for washing and grinding of girasol, its pouring with acidified water and electrocontact heating, extraction at the specified parameters of the process, concentration of extract by reverse osmosis, photosterilisation and packing under aseptic conditions, to the temperature of 55-65°C. Extraction is carried out at phase ratio of 1:1.2, pH 5-6.5 and periodic collapse of pressure in extraction mixture until extractant boils. Separated extract is concentrated by reverse osmosis until content of dry substances of 15-20%, photosterilised and packed under aseptic conditions.
EFFECT: method makes it possible to reduce colouration of inulin with relative high yield of the latter as finished product, to reduce power inputs and to provide for finished product storage life of at least a year without significant change in its consumer and technological properties.
