FIELD: food industry.
SUBSTANCE: method provides for extraction of hop by liquid nitrogen with separation of according miscella. Then ginger is cut and dried in microwave field at the specified parametres of the process, ginger and malt are mixed, produced mix is impregnated with separated miscella, simultaneously increasing pressure and releasing it down to atmospheric value, and mixture is simultaneously frozen. Then cryo-grinding of mixture is carried out in medium of released nitrogen, poured with drinking water and saccharified to produce wort, beer yeast is added in it, fermented and filtered to produce finished product.
EFFECT: method makes it possible to reduce duration of technological process and to increase stability of foam in finished product.
