FIELD: food industry.
SUBSTANCE: method for production of cherry-plum compote is proposed. Recipe components are prepared. Scorzonera is prepared, cut, dried in microwave field at preset process parametres and roasted. Chestnuts are milled and roasted, barley grains and soya are roasted. Scorzonera, barley grains, chestnuts and soya are mixed in mass ratio 7:7:2:4, obtained mixture is extracted by drinking water at phases ratio 1:(6-7) and periodic depressurisation in the extraction mixture till water boils. The produced extract is separated and filtered. One prepares syrup on its basis containing dry substances in an amount of 54.5-65.5%. Cherry-plum and syrup are packaged, vacuum-sealed and sterilised.
EFFECT: invention allows to produce compote with coffee flavour and aroma tones with no coffee content, reduce content of boiled fruits in the end product and extend the product's storage life.
