SUBSTANCE: group of inventions relates to manufacturing technique of coffee substitutes. The methods include extraction of the aromatic vegetable raw material envisaged by the method versions with liquid nitrogen with separation of the corresponding miscella, scorzonera preparation, cutting, drying in microwaves with given process parametres and frying, frying barley grains, mixing scorzonera and barley grains, impregnating them with the separated miscella and simultaneous pressure boost, pressure release to atmospheric pressure and freezing scorzonera and its cryomilling in nitrogen environment.
EFFECT: methods make it possible to produce new flavoured coffee drink from non-traditional raw materials.
