FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. Method provides for recipe components preparation, cutting dandelion root, drying it in microwave field as preset process parametres, frying and cryomilling in liquid nitrogen, frying barley malt. Mixing of dandelion root and barley malt in the mass ratio of 7:3. Extraction of produced mixture with drinking water at specified parametres of the process. Filtering of produced extract, making syrup on its basis, packing of cherry plum and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product.
