FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. The method provides for recipe components preparation, oyster plant cutting, drying in microwave field at preset process parametres, frying and milling, rye grain frying, mixing oyster plant and rye grain in a mass ratio of 7:3, produced mixture extraction with drinking water at preset process parametres, produced extract filtering. Then one performs preparation of syrup based on the extract, packing of cornels and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
