FIELD: food industry.
SUBSTANCE: invention is aimed at using in canning industry. The compote production method provides for recipe ingredients preparation, scorzonera cutting, drying it in microwave field at preset process parametres, roasting and milling, barley malt roasting, mixing of scorzonera and barley malt in mass ratio of 7:3, extraction of the obtained mixture by drinking water at preset process parametres, obtained extract filtering, preparation of a syrup on its basis, packing of cornels and syrup, sealing and sterilisation.
EFFECT: invention enables producing of compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
