FIELD: food industry.
SUBSTANCE: invention relates to technology of canned compotes manufacturing. The method provides for recipe components preparation, oyster plant cutting, drying in microwave field at preset process parametres, frying and milling, rye grain frying, mixing of oyster plant and rye grain at a weight ratio of 7:3, obtained mixture extraction by drinking water at preset process parametres, obtained extract filtering, preparation of syrup based on it, packing of raspberries and syrup, sealing and sterilisation.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplify the technology, reduce content of boiled berries in the end product, extend the product's storage life.
