FIELD: food industry.

SUBSTANCE: invention relates to technology of preserved compotes production. The method provides for preparation of formula components. One performs cutting dandelion roots, their drying in microwave field at preset process parametres, frying and milling. Frying and milling acorns, frying barley grains and soya. Dandelion root, barley grains, acorns and soya are mixed. The produced mixture extraction with drinking water at preset process parametres, the produced extract filtering, preparation of syrup based on it. Black currants and syrup are packed, sealed and sterilised.

EFFECT: method makes it possible to produce compote with coffee flavours with no coffee added to the formula, to simplify technology and reduce content of overcooked berries in finished product without reduction in its shelf life.
