FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved compotes production. The method of production includes preparation of the recipe components, girasol-sunflower cutting, its drying in microwave field at preset process parametres, frying and milling. Acorns are fried and milled; barley and soya grains are fried. Girasol-sunflower, barley grains, acorns and soya are mixed; the produced mixture is extracted with drinking water at preset process parametres. The obtained extract is filtered, syrup is made on its basis. Cherry-plums and produced syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
