FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved compotes production. The method provides for recipe components preparation, cutting dandelion roots, their drying in microwave field as preset process parametres, frying and mincing acorns, frying barley grains and soya. Dandelion root, barley grains, acorns and soya are mixed. Obtained mixture is extracted with drinking water at preset process parametres. The produced extract is filtered. Syrup is cooked out of it. Strawberry and syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method makes it possible to produce compote with coffee flavours with no coffee added to the formula, to simplify technology and reduce content of overcooked berries in finished product without reduction in its shelf life.
