FIELD: food industry.
SUBSTANCE: invention relates to technology of preserved compotes production. The method provides for preparation of formula components. Yacon is prepared, cut, dried in microwave field at preset process parameters and roasted. Acorns are roasted and milled. Barley grains, oat grains and soya are fried. Yacon, barley grains, oat grains, acorns and soya are mixed; the produced mixture is extracted with drinking water at preset process parameters. The produced extract is filtered. Syrup is cooked out of it. Pears and syrup are packaged, vacuum-sealed and sterilised.
EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled fruits in end product without reduce of product's storage time.
