FIELD: food industry.

SUBSTANCE: lime peel and hop are mixed, produced mixture is extracted with liquid nitrogen with separation of according miscella. One performs cutting scorzonera, its drying in microwave field at preset process parameters, blending it with malt; the mixture impregnation by separated miscella is performed with simultaneous pressure to the level of nitrogen saturated vapours at impregnation temperature. Pressure is reduced down to atmospheric one with simultaneous freezing of mixture, its cryo-grinding is carried out in medium of released nitrogen. The mixture is poured with drinking water and saccharified to produce wort, beer yeast is added in it, fermented and filtered to produce finished product.

EFFECT: invention makes it possible to reduce duration of technological process and to increase stability of foam in finished product.
