FIELD: food industry.

SUBSTANCE: invention relates to the field of food industry. One proposed a flavoured waffle bread production method. Cumin is extracted with liquid nitrogen with separation of according miscella. Dandelion roots are cut. Then dandelion roots are dried in the microwave field at preset process parameters, then they are fried. Then they are impregnated with separated miscella with simultaneous pressure boost till pressure level of nitrogen saturated vapours at impregnation temperature. Pressure reduction down to atmospheric value with simultaneous freezing of dandelion roots and their cryo-milling in medium of released nitrogen to produce flour. Then dough making from first grade wheat flour, dandelion roots flour produced according to specified technology, baker's compressed yeast, vegetable oil, sugar, salt and water. Then the dough is fermented, moulded in the form of sheets and baked.

EFFECT: invention enables production of new waffle bread which has improved consistency and coffee taste and flavour with no coffee added to the formula according to an energy-saving technology.
