FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages heating the jars in 140°C air flow at a rate of 2.75-3 m/s during 10 minutes and showering with 100°C hot water during 15 minutes. Then the jars are cooled in an atmospheric air flow at a rate of 7-8 m/s during 15 minutes. During the heat treatment process the jar is turned upside down with a frequency equal to 0.133 s-1.
EFFECT: invention allows to reduce thermal treatment duration and decrease treatment non-uniformity.
