FIELD: food industry.
SUBSTANCE: invention relates to the technology of preserved appetisers production. The method envisages recipe components preparation, mixing sauteed and milled bulb onions and sunflower flour preliminarily maintained in drinking water with tomato paste, drinking water, sugar, salt, black hot pepper, allspice, cloves, coriander and laurel leaf, the mixture cooking and addition of acetic acid to produce a sauce; mince production from laminaria, carrots and beets (all sauteed in vegetable oil), frying aubergines cut into discs, the aubergines, mince and sauce packing, sealing and sterilisation.
EFFECT: method allows to reduce the manufactured target product adhesion to container walls.
