FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method envisages boneless meat raw material preparation, salting, drying and packing. According to one version the meat raw material is represented by beef or poultry meat; salting is performed using starter cultures GN-Start PS76 and Safe LM. According to the second version the meat raw material is represented by pork; salting is performed using starter cultures GN-Start SL76 and Safe LM.
EFFECT: invention allows to increase the ready products yield.
