SUBSTANCE: invention relates to dairy industry and may be used for curd manufacture. The method envisages milk standardisation, the standardised mixture treatment with an external magnetic field, homogenisation, pasteurisation, cooling to the fermentation temperature, fermentation, ripening, treatment, the clot dehydration and the ready product cooling and packing.
EFFECT: invention ensures production of curd with enhanced biological value and the curd yield increase by 2,5±0,5%.
