FIELD: food industry.
SUBSTANCE: invention relates to a stabilising system that may be used during frozen desert production. The stabilising system of natural ingredients, intended for a frozen sweet product, includes native rice starch, egg yolk as a natural emulsifier and citrus fibres. The invention relates to a frozen sweet product production method using the stabilising system containing only natural ingredients. In another aspect, the invention additionally relates to frozen sweet products manufactured by the said method.
EFFECT: invention is aimed at providing for stablising systems that are more natural and efficient.
