SUBSTANCE: group of inventions relates to cheese-making. The device for drainage of cheese curd comprises at least one vertical tubular drainage column for receiving cheese curd, in which during the operation the curd pole is formed. The drainage column is located on the clarification tank, has a metering device and at least one perforated section which together with the casing surrounding the corresponding section forms a drainage section. Each drainage section is provided with at least one drain pipe for whey. At least one drain pipe for whey of each drainage section is connected to the clarification tank. The device for cheese production comprises the device for cheese curd draining.

EFFECT: method of cheese curd draining comprises the use as wash liquid for the clarification tank at least a part of fresh whey obtained in drainage sections.
