FIELD: food industry.
SUBSTANCE: invention relates to technology for production of flour confectionary products. Cooked dough is prepared during the method implementation. For scalding one uses a mixture of wheat flour and flavoured girasol-sunflower flour. Flour is produced according to the preset technology. Gingerbreads are moulded, baked and glazed.
EFFECT: produced cooked gingerbreads have increased volume combined with uniform porosity preservation.
