FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for manufacture of bakery products of rye and wheat flour mixture. The method is as follows: barley flour, malt and caraway ground till shell destruction are stirred and brewed (while stirred) with 95-97°C water till homogeneous mass production. Water is added in 2-3 phases. Then one performs saccharification during 2-3 hours, cooling to a temperature of 32-34°C drying till moisture content is equal to 12-14%.
EFFECT: invention allows to enhance biological value of the produced brew, enrich it with food fibres and mineral substances as well as increase the brew freshness preservation life.
