FIELD: food industry.
SUBSTANCE: invention relates to the dairy industry. The method involves a standardised milk-and-vegetal mixture preparation by way of dry defatted milk reconditioning in drinking water, introduction of a standardising component represented by "Ecolact" milk fat substitute with subsequent performance of the mixture homogenisation processes, pasteurisation, coagulation of milk proteins, the clot cutting, self-pressing and pressing. Milk proteins coagulation is performed with the introduction of calcium chloride in an amount of 400 g per 1 t of the milk-and-vegetal mixture, rennet in an amount of 1 g per 1 t of the milk-and-vegetal mixture and a glucono-delta-lactone in an amount of 18 kg per 1 t of the milk-and-vegetal mixture.
EFFECT: invention allows increasing the curd product yield and production volume.
