FIELD: food industry.
SUBSTANCE: proposed method for manufacture of enriched cooked gingerbreads involves invert syrup and sugar syrup preparation, dough kneading, scalding, moulding, baking and cooling, the ready products glazing, proofing and packing. During dough kneading one adds (per 100 kg of flour) 0.00192 kg of "Seleksen" food additive preliminarily dissolved in vegetable oil, 0.29 kg of vitamin premix 991/9 as well as the remaining raw materials envisaged by the recipe.
EFFECT: invention allows to enrich the goods with vitamins, mineral substances as well as ensures enhancement of gingerbreads quality indices, imparting functional properties to them due to balanced vitamin and mineral composition, expansion of the range of gingerbread goods of preventive purpose.
