FIELD: food industry.
SUBSTANCE: at first fruits are prepared and packed with subsequent treatment in UHF field with 2400+50 MHz frequency at a power equal to 700 W during 1.5 minutes. Then one performs pouring with 97-98°C syrup, prepared from infusion of wastes treated in UHF electromagnetic field, power being 700 W, during 1.5-2 minutes, and sugar syrup. Then jars are repeatedly treated with UHF field during 1.5 minutes; the jars contents are heated to 90°C with subsequent sealing. Then the jars are put into the carrier for ensuring mechanical air-tightness, heated in 115°C dimethylsulfoxide solution during 8 minutes with subsequent cooling by way of spraying with water with a temperature varying from 90 to 35°C during 12 minutes. During the heat treatment process the jars are turned upside down with a frequency equal to 0.133 s-1.
EFFECT: process duration reduction and the ready product quality enhancement.
