FIELD: food industry.
SUBSTANCE: method involves preparation and milling of initial raw materials represented by raw girasol tubers, fractioning until the fraction size is 1.0-1.6 mm, the produced fraction washing in acetic acid solution at pH equal to 3.8-4.0, water duty equal to 1:20 and temperature equal to 35-40ºC during 5-10 min under constant stirring conditions with further centrifuge expression. Expressed pulp is added into a solution with softened industrial water with total salts content no more than 250 mg/l inclusive of total (Ca2+, Mg2+) hardness no more than 15 mcg equivalent/l, content of chlorides (Cl-) - no more than 50 mg/l, that of sulphates (SCV) - no more than 100 mg/l, with the alkali reagent represented by KOH. One maintains the value of pH equal to 9.0-10.0, water duty - 1:20-1:25, temperature - 40-45°C. One adds hydrogen peroxide at a temperature of 40-45°C with the stirrer constantly operating at a rotation rate equal to 30-60 rpm until the optimal concentration of 0.5% is reached with pH equal to 8.5-9.0. Then one proceeds with slow controlled heating to a temperature of 65-70°C, maintenance for 40-60 min and centrifuge expression at rotation rate equal to 4800-5000 rpm. After that one performs produced pulp washing and two operations of afterwashing with ozonation. The ready substance is additionally subjected to stages of homogenisation with preparation of hydrogels and combined IC and convective drying with optional further milling of the produced substance into a powdered condition. The dried product may be reconditioned into the source product.
EFFECT: invention allows to produce bleached inuline-containing vegetal food fibres from raw girasol tubers and maximally preserve inuline substances in the ready product without usage of toxic reagents and through simple technological operations.
