FIELD: food industry.
SUBSTANCE: invention relates to food industry. Apple compote sterilization method involves heating process in an air flow at 120-122 °C and the rate of 1.5-2 m/sec during 40 minutes with subsequent maintenance at the temperature of 100 °C during 5-8 minutes and subsequent cooling in an atmospheric air flow with the temperature of 20-25 °C and the rate of 7-8 m/sec during 20 minutes. During the whole heat treatment process the jars are subjected to interrupted 2-3-minutes rotation upside down with the frequency of 0.166 sec-1 every 2-3 minutes.
EFFECT: invention ensures lower heat treatment duration and higher ready product quality.
