SUBSTANCE: method of obtaining fat from fish entrails includes grinding fish entrails to a particle size of 2-5 mm, mixing with Alcalase®FG Novozymes A/S enzyme preparation in an amount of 0.4-0.6 wt % of the mixture, fermenting at the temperature of 40±0.2°C for 20-30 min, at a pH of 6.6±0.2, separating.
EFFECT: invention makes it possible to increase the amount of the product obtained due to destroying lipid-protein formations of cellular structures under the action of an enzyme preparation.
