FIELD: food industry.
SUBSTANCE: invention relates to confectionary industry. Mixture for baking flour goods in the form of a cracker includes buckwheat flour, pansalt, a functional additive, a structure-forming agent, and in addition contains chickpea flour, taken in the ratio of 1:2 to a buckwheat flour, a baking powder. As a functional additive contains SUPERCEL® Psyllium food fibers. As the structure-forming agent contains flax flour with the following ratio of components in the initial mixture, wt%: buckwheat flour 51–60, chickpea flour 17–20, dietary fibers SUPERCEL® Psyllium 6–11, flax flour 10–18, pansalt 2.8–3.2, baking powder 0.01–0.03.
EFFECT: invention allows to reduce caloric content of the product, to increase dietary fibers content, antioxidant properties, improve rheological properties and organoleptic indices of the article.
