FIELD: food industry.

SUBSTANCE: method is characterized by the fact that the smoke occurs in a cylindrical chamber due to the heating of sawdust on an electric plate with a sector hole for ash discharge. Sawdust is moved through the plate by mobile scrapers, above which fixed scrapers are installed, allowing to mix, and also to cut off tops of sawdust piles and dump them on the bare part of a plate. Heating temperature of the electric plate decreases from 450 °C in the sawdust loading area up to 250 °C in the ash discharge area. Thickness of a sawdust layer on the electric plate is 10–12 mm. Residence time of sawdust on the electric plate is 45–60 seconds with an excess air factor α 1.5–2.

EFFECT: invention provides an increase in the content of smoking components and a decrease in the content of carcinogenic aromatic polycyclic hydrocarbons in smoke.
