FIELD: food industry.
SUBSTANCE: invention relates to the field of tea substitutes, as well as biochemistry. In the method, leaves are crushed, then crushed leaves are placed into a chamber that provides an oxygen-free space. This chamber is rotatable, there the crushed leaves pass the first fermentation step during 24–48 hours under the action of own heat release. After that the second stage of fermentation is carried out by rotating the chamber and simultaneously heating it, wherein the second fermentation step is carried out for 20–120 minutes while the chamber is heated to 50–70 °C and the speed of its rotation is 0.5–1.5 rpm. Additional fermentation of the leaves is carried out for 30–60 minutes, during which the heating of the chamber is stopped and oxygen is fed into it, while it is still rotating. In the end, the fermented leaves are remove from the chamber and dried.
EFFECT: invention makes it possible to simplify the technological process by providing a more rapid procedure for fermenting tea leaves and preserving the beneficial trace elements in tea leaves.
