FIELD: meat industry.
SUBSTANCE: invention relates to meat industry and may be used for rabbit carcases cutting for industrial processing and retail trade. Method is characterized by sequential separation of shoulder rack part, hip part consisting of two rear legs, neck portion, rib part, breast together with flesh of abdominal part and spinal back part. For separation of the hip part, an incision should be made 1 cm above the point of its connection with the carcass, then separated by moving the knife along the ridge to the tail, after which the hip part is divided into two legs. Then cutting, separating the breast fillet together with the flesh of the abdominal part. Further, the costal portion is separated by separating the shoulder rack by cutting the muscles at the junction with the forearm. After that, rib part is cut off from spinal back part and neck part.
EFFECT: invention usage will allow to expand the range of produced semi-finished products of rabbit carcasses and rationally use valuable meat resources.
