FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Disclosed is a method of producing sugar cookies, comprising preparing a suspension by mixing egg grated melange or egg powder, malt extract, invert syrup, edible salt, sugar sand, a milk product, sodium bicarbonate and introducing a fat component and lecithin. Emulsion is fed into the dough kneading machine and mixed with the mixture of loose components from flour, starch, recycled waste crumbs, the billet molding, baking and cooling. Products of fruit-and-vegetable raw material are also used, and sand-sugar is introduced in stages. Suspension is mixed and treated in conditions of energy supply by combining hydrodynamic and acoustic cavitation with oscillation frequency of 18–24 kHz in mutually perpendicular planes with recirculation through cavitation reactor.
EFFECT: method ensures production of a product with high biological value.
