FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used in production of bakery products enriched with food additives. Disclosed is a method for production of bakery products, including preparation of sponge from part of flour, water and yeast, brewing, making dough by mixing sponge, water, an aqueous solution of table salt and powder obtained from secondary resources formed in the process of rubbing pears, by processing in an electromagnetic field of ultrahigh frequency, drying, cooling and grinding, with the remaining flour, dough fermentation, handling, dough pieces proofing and bakery dough pieces proofing, at that powder obtained from secondary resources formed during straining of pears by their treatment in microwave field of electromagnetic field, drying, cooling and grinding; one performs preparation of sponge in amount of 3.0–3.5 % of flour weight and during preparation of dough in amount of 3.0–3.5 % of flour weight.
EFFECT: invention allows to reduce duration of technological process of bakery product manufacture with achievement of high quality of the ready product.
