FIELD: food industry.

SUBSTANCE: invention relates to food industry and may be used for production of pasta products for functional purposes. One proposes a dough composition for production of pasta products containing wheat flour and spelt flour of peeled grain of two-grained spelt of Runo variety; at that, it additionally contains wheat offal in the following ratio of initial components, kg: wheat flour - 5; spelt flour 5; wheat offal 0.3; water design amount to dough moisture content of 28-34%. Also disclosed is a dough composition for pasta production, comprising wheat flour and spelt flour from flaked grains of Runo two-grained spelt, wherein it additionally contains wheat offal in following ratio of initial components, kg: wheat flour 6.7; spelt flour 3.35; wheat offal - 0.4; water design amount to dough moisture content of 28-34%.

EFFECT: invention increases content of food fibers in pasta products due to use of wheat bran, which allows making products functional purpose and simultaneously improve their quality, wherein the combined introduction of spelt flour and wheat bran into pasta dough improves the elastic properties of raw gluten, wherein the crude gluten content in the mixture is not less than 28%, as well as increases temperature of maximum viscosity of starch gel, which contributes to the production of quality pasta products with high boiling properties, and the amount of dry substances passed into cooking medium does not exceed 6%.
