FIELD: food industry.
SUBSTANCE: invention relates to the canning industry and can be used in canning compotes. Disclosed is a method for production of grapes compote, in which berries after packaging in cans are heated for 120 s by means of cyclic supply of saturated water steam with jars with increasing temperature, duration of steam supply and holding cycles is 10 s and 10 s, respectively, and steam temperature is from 100°C with each cycle increases by 10°C, and wherein in each steam supply cycle the outer surface of the jars is blown by air heated to temperature of 120-130°C, followed by pouring with 97-98°C syrup, sealed and sterilized in autoclave according to preset mode with further continuation of cooling in another autoclave or vessel according to certain mode.
EFFECT: invention ensures industrial sterility of preserved food, allows reducing duration of heat sterilization process, reduces non-uniformity of heat treatment, ensures saving of heat energy and water, as well as quality of finished products.
