FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used in the production of confectionery products intended for direct consumption in food. In the process of making flour confectionery, the dough is kneaded to a uniform consistency, cut into portions and proofed. The dough is rolled out into a layer with a thickness of 0.5-3.0 cm, molded / cut / made in the form of a star, and / or a heart, and / or a flower, and / or a butterfly, and / or an umbrella, and / or a moon, and / or animal and / or fish and / or vegetable and / or fruit and / or transport. Then a batch of products is fried until cooked in a boiling deep fat and unloaded from the frying vessel. The semi-finished product is loaded into a coating pan, where it is poured with hot honey-sugar syrup and mixed until the syrup is evenly distributed over the surface of the products at a rotation speed of 12-15 rpm for 3-5 minutes. The resulting article is formed into the desired shape and packaged.
EFFECT: invention will prevent grinding of the fried semi-finished product, provide an optimal mixing mode for products, optimize the mixing process, improve the quality and expand the range of products.
