FIELD: foodstuffs.
SUBSTANCE: invention relates to the food industry, particularly to the confectionery industry, and can be used in preparation of cake decorations. The proposed method for making a cake decoration includes producing, at the first stage, a copy of a drawing on a substrate constituting a light parchment and located on the printed original of the drawing with a dough for drawing, wherein the dough for drawing is made of flour, egg whites, butter and powdered sugar at a certain ratio of components in the dough. The resulting dough for drawing is divided into parts and food coloring is added thereto, the resulting copy of the drawing is then frozen. At the second stage, the dough for a biscuit layer is made. In the process of making the biscuit layer, milk with butter and flour is boiled, and the egg whites are introduced gradually whipped into a fluffy mixture. At the third stage, the dough for the biscuit layer is applied in a thin layer to the frozen copy of the drawing so that the height of the finished biscuit is no greater than 7 mm, baked, and the substrate is removed. Also proposed is the cake decoration created by the described method.
EFFECT: invention is intended to produce a cake decoration with high organoleptic characteristics in terms of taste and with increased resistance to external influence.
