SUBSTANCE: invention relates to the food industry. In the method for production of grain bread, unpeeled wheat grain is washed with water and kept in a 1.5% water-alcohol extract from the antlers of northern deer at a temperature of 25-35°C for 20-24 hours, it is subjected to germination for 15-18 hours to the size of sprouts no more than 2.0 mm. Next, the wheat grain is crushed by cutting, passing it through a chopper with a hole diameter of 2-3 mm. Then dough is kneaded with humidity of 48% using the strait dough method from the grain crushed mass, a solution of table salt, a suspension of pressed yeast and drinking water. Moreover, when kneading the dough, the crushed grain mass is first introduced into the kneading machine, then, with the kneading mechanism of the kneading machine working, a solution of table salt, a suspension of pressed yeast is gradually added. The kneading is continued for 5-7 minutes, the dough is fermented for 120 minutes, baking is carried out at a temperature of 235°C for 40 minutes.

EFFECT: invention makes it possible to improve the quality and nutritional value of products, as well as their preventive orientation.
