FIELD: food industry.
SUBSTANCE: invention relates to bakery industry and can be used in production of bakery products. Method for production of bakery products enriched with calcium involves addition of a calcium source into a starter, preparation of a dough piece from flour, water and starter by a safe method, dough handling, proofing and baking of bread. Starter used is an aqueous solution of yeast and table salt. Calcium source used is calcium bis (2-aminoethane-1-sulphonate), which is added to the starter in amount of 0.3–0.7 % of the flour weight. Calcium bis (2-aminoethane-1-sulphonate) is pre-dissolved in water, the volume of which is 4 % of the water volume for the dough piece.
EFFECT: invention allows to expand the range of enriched bakery products with increased content of added calcium by 3,3–12,8 times in comparison with unenriched bread, as well as increased storage life up to 72 hours.
