SUBSTANCE: invention relates to the dairy industry. The method for making acidophilic paste includes the following stages: heating and homogenization of milk with a fat mass fraction of 0.5-4.0 wt. % and protein 2.7-3.3 wt. % heating of whey with an acidity of 3.3-4.3 pH units, this whey is mixed with milk, the resulting concentrate is separated and cooled, acidophilus bacillus ferment is introduced into the concentrate, the mixture is dispersed, packed into consumer containers, fermented. Acidophilic paste of functional nutrition obtained by this method is also described.
EFFECT: invention makes it possible to obtain a product having the form of a homogeneous gel with a dense clot, without separating moisture, with a pure sour-milk taste, a soft, tender, plastic consistency, melting in the mouth when consumed.
