FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to methods for obtaining a structure-forming agent. The method for obtaining a structure-forming agent from pig skin includes primary preparation of pig skin, preliminary grinding, cooking, introduction of plant components, repeated grinding, cooling. Pre-ground pig skin is subjected to swelling in a solution of succinic acid at the rate of 2-4 g of succinic acid per 998-996 ml of water at a temperature of 22-25°C and a water duty of 1: (2-3) for 8 hours with periodic stirring. Cooking is carried out in the same succinic acid solution at a temperature of 95-100°C and a water duty of 1: (2-3) for 2-6 hours with periodic stirring. 30 minutes before the end of cooking, crushed ginger root is introduced in an amount of 1.3-1.6% per 100 kg of pig skin weight. At the end of cooking, the resulting mass is homogenized to a creamy state, poured into containers and cooled at a temperature of 2-40°C for 2-3 hours.
EFFECT: proposed method for obtaining a structure-forming agent has a simplified technology, while the resulting structure-forming agent has high quality and organoleptic characteristics, improves the quality of molded products from low-grade meat.
