FIELD: food industry; biotechnology.
SUBSTANCE: method is proposed for changing the isoelectric point of casein protein, which includes water activation by infusion of distilled water with crushed shungite for 3 days to a concentration of hydrated fullerene C60 HyFn 4 mg/ml or short-term treatment with microwaves at a frequency of 2.45 GHz in a non-thermal mode and production of protein solutions on its base.
EFFECT: invention provides an extension of the arsenal of methods for the production of casein protein to obtain new types of food products.
