SUBSTANCE: invention is related to production of bakery products. The composition of the ingredients for the production of enriched rye-wheat bread contains peeled rye flour, first grade baking wheat flour, a suspension of pure cultures of yeast and lactic acid bacteria, wheat gluten, dry fermented rye malt, pressed baking yeast, food salt, coriander, water, additive: processed extract of ground sugar cane with isolated flavonoids: phytolin. In this case, the components are used at the following ratio per 100 kg of flour mixture, kg: wheat gluten 0.2-0.3, dry fermented rye malt 4.5-5.0, pressed baker's yeast 0.5, phytolin 3.0-5 0.0, table salt 1.2, coriander 0.5, suspension of lactic acid bacteria 0.06, suspension of pure yeast cultures 0.03, water - 35-40. Moreover, the mixture of flour is composed of rye baking flour 59-61 kg and baking wheat flour of the 1st grade 39-41 kg.

EFFECT: obtaining a finished product with high consumer properties for everyday nutrition, enriched with functional ingredients.
